Popcorn is not the same as the corn you eat on the cob. It is a special kind of corn. Each small kernel has a hard, shiny outer shell called the hull. Inside the hull there is soft starch and a tiny amount of water, and that water is the secret.

When you heat the kernels, the little bit of water inside gets hot and turns into steam. Steam needs much more space than water does. But the hull is strong and does not let the steam escape, so the pressure inside the kernel keeps building and building.
